The difference between a bullnose and a bevel are the way that they eliminate the edge of the counter. Bevels eliminate the edge with a straight but angled cut, leaving a flat side where the corner was. A bullnose, on the other hand, is a way of getting rid of the edge with a rounded profile.

There are both a full bullnose and a half bullnose style of rounding, however. The full bullnose profile rounds both the top and the bottom of the counter. The half bullnose only rounds the top edge. By only rounding the top, the half bullnose allows more of the depth of the counter to be visible. It is also not as likely for someone to strike the bottom edge, for example when falling, so rounding it is not as important for safety.
